There are many different maps played in the various competitive formats TF2. Game modes such as Control Points (5), King of the Hill, Payload, and Attack/Defend are the most prevalent, as they have been the most tested through and consistent types of maps. In addition to official maps put out by Valve, there are several custom maps that are considered competitive maps.
